Mediterranean Kale from whfoods.com

Prep and Cook Time: 15 minutes

Ingredients:
  • 2 medium bunches kale, chopped, about 12 cups
  • 2 TBS lemon juice
  • 1 tsp soy sauce
  • 3 medium cloves garlic, pressed
  • extra virgin olive oil to taste
  • salt & black pepper to taste

Directions:


     

  1. Bring lightly salted water to a boil in a steamer with a tight fitting lid. The salt helps to enhance flavor and color of vegetables.
     
  2. While water is coming to a boil, fold each kale leaf in half and pull or cut out stem. Chop leaf and rinse in colander.
     
  3. When water comes to a boil add kale to steamer basket and cover. Steam for 7-10 minutes, until tender.
     
  4. Toss with rest of ingredients and serve.

    Serves 4

Spicy Cabbage Soup from whfoods.com

 

Prep and Cook Time: 45 minutes

Ingredients:
  • 1 medium sized onion, quartered and sliced thin
  • 3 medium cloves garlic, chopped
  • 1-2 tsp minced fresh red chili pepper (serrano, or jalapeno)
  • 2 tsp ground coriander
  • 1 TBS dry mustard
  • 5 cups + 1 TBS chicken or vegetable broth
  • 2 TBS fresh lemon juice
  • 2 medium sized red potatoes cut in ˝ inch cubes, about two cups
  • 1 15oz can diced tomatoes
  • 3 cups thinly sliced Savoy or green cabbage,
  • salt and black pepper to taste

Directions:


     

  1. Heat 1 TBS broth in a medium soup pot.  Sauté sliced onion over medium heat for about 5 minutes. Stir in garlic and minced chili pepper. Continue to sauté for another minute.
     
  2. Stir in dried coriander and mustard, and add broth, and rest of ingredients except cabbage, salt and pepper. Simmer for about 20 minutes, uncovered, or until potatoes are tender.
     
  3. Add cabbage, and cook for another 5 minutes. Season with salt and pepper to taste.

    Serves 4

15 minute Steamed Halibut with Bok Choy from whfoods.com

 

Prep and Cook Time: 15 minutes

Ingredients:
  • 4 pieces of halibut filet, or steaks, about 5-6oz each
  • 1 medium onion cut in half and sliced medium thick
  • 5 cups chopped bok choy, (remove tips of leaves and discard)
  • 2 cups thick sliced fresh shiitake mushrooms, stems removed
  • Dressing
  • 1/3 cup minced scallion
  • 3 medium cloves garlic, pressed
  • ˝ TBS finely minced fresh ginger
  • 3 TBS fresh lemon juice
  • 1 TBS soy sauce
  • 1 TBS extra virgin olive oil
  • salt and white pepper to taste

Directions:


     

  1. Mix together dressing ingredients, scallion, garlic, ginger, lemon juice, soy sauce, and olive oil in a bowl and set aside.
     
  2. Bring lightly salted water to a boil in a steamer with a tight fitting lid.
     
  3. Layer onion, bok choy, mushrooms and halibut, in this order, in the steamer basket, cover, and steam for about 3-5 minutes. Sprinkle a little salt and white pepper over halibut before steaming.
     
  4. Serve on a platter with halibut nestled on top of vegetables and drizzle sauce over all of it.
